Ingredients
2 eggs
Diced tomatoes (15g = one spoonful)
Diced bacon (5g = one spoonful)
Baby spinach (8g = 4-5 leaves)
Steps
Dice the tomatoes
Start heating the pan with a bit of oil on medium
Whisk 2 eggs, add to pan
Add in tomatoes, bacon, and spinach
Cook on medium. After about 2 minutes, flip half over to form the omelette
Put lid on, cook on medium low for 1-2 min on each side

Used regular bacon, cooked, and diced. Try using ground bacon next time and revise?
