Marketplace Omelette

Ingredients

  • 2 eggs

  • Diced tomatoes (15g = one spoonful)

  • Diced bacon (5g = one spoonful)

  • Baby spinach (8g = 4-5 leaves)

Steps

  1. Dice the tomatoes

  2. Start heating the pan with a bit of oil on medium

  3. Whisk 2 eggs, add to pan

  4. Add in tomatoes, bacon, and spinach

  5. Cook on medium. After about 2 minutes, flip half over to form the omelette

  6. Put lid on, cook on medium low for 1-2 min on each side

  • Used regular bacon, cooked, and diced. Try using ground bacon next time and revise?
